The great virtue of the Apex Giant Pour over is that it packs flat. Without the bag (and it’s a nice bag BTW), it weights exactly the same (57.2 grams) as the trusty red plastic Melita cone that I’ve been travelling with for decades. But the Melita is the size of a grapefruit. When packed, the Apex Giant is not much thicker than a week’s worth of filters. But the Apex Giant is a bit more trouble to use and has a learning curve.
    – First, the assembly is kinda fiddly. Three identical plates of aluminum dovetail together to form a three-sided pyramid. Not especially difficult, but it will drive you mad the first time. The first two sides go together easily, but then the third side – you will swear you have a defective unit until you fiddle and… Voila! The joints slip into place and there it is, you have a three sided filter cone pyramid thing. The system is really simple and rugged – and in theory it should last a while. I do worry that one of the plates or joints could bend – we’ll see.
    – Second, the triangular mouth shape offers you some challenges during the prep. Cone shaped paper filters don’t naturally fit. They’re cones, not 3-sided pyramids – geometry, right? They sit high and want to spring out of the Apex Giant, So, if you don’t already rinse your filters before adding the grounds, doing so will conform the filter to the pyramid and help it stick in place.
    – And third – the triangle will force a change in your technique – no more gentle circles. I got good results with a crisscross technique. A bit of stirring helps, and you’ll need to pay attention to the corners, but in the end, with a slight change up, it makes as good a cup of coffee as any other filter cone. It comes with what appear to be unbleached #2 flat bottom Melita filters. I prefer bleached Hario V60 02 filters because they conform better to the triangular mouth shape. And watch the water level in your cup! Any filter will tend to pook out of the bottom of the Apex Giant and dip into your brew. If this bothers you, just change the ratio and make less.
